This chilli sin carne is so simple to make, anyone can do it! And with soya mince instead of meat, this chilli sin carne is very healthy too.

Preparation

Start by soaking the dried soya mince in hot water for around 10 minutes.

In the meantime, prepare the vegetables:
cut the sweet pepper in half and take out the seeds. Slice in strips and cut the strips in half.
Peel and top and tail the carrot and cut into slices.
Peel and chop the onion.
Rinse the red kidney beans under water

Heat the oil in a large pan and fry the onions for around 5 minutes on a medium heat.
Add the vegetables (apart from the kidney beans) and fry for another 5 minutes.
Add the red kidney beans, the chopped tomatoes, the rehydrated soya mince and the spices.

Heat everything through until piping hot. You can either leave it to boil on a medium heat until the vegetables are tender, or if you like the vegetables crunchy, you can just heat it through.
