Another easy to make pasta, the pasta is free from gluten but the salami is not, if you're not vegetarian you could try and find a gluten free salami.

Preparation

Cook the gluten free penne following the instructions on the packet.

Boil the French beans for around 10 minutes until tender.

Make a dressing by combining the orange juice, olive oil, herbs and salt and pepper to taste.

Mix the peppers and salami in with the still hot cooked pasta and add the dressing. Stir well to combine.

Put the rocket leaves on plates or on a serving dish and place the pasta on top.

  • 1 orange, squeezed
  • 1 red pepper, pips removed and cut in strips
  • 1 yellow pepper, pips removed and cut in strips
  • 250g French beans, topped and tailed
  • 250g penne (gluten free option available)
  • 250g vegan salami, sliced
  • 2tbsp mixed Italian herbs, fresh or dried
  • 4tbsp olive oil
  • 75g rocket leaves
