Another warming soup. Soups are great meals if you serve them with some (rye) bread spread with almond butter, butter, margarine or cheese.

Preparation

Heat the oil in a large pan. Add the chopped vegetables and fry until lightly browned. Fry the bacon in a separate pan in a little oil.

Add the stock to the vegetables and simmer for about 20 minutes.
Add the butter beans for the last 10 minutes.

Serve in 4 bowls with the vegan bacon strips and 1tbsp green pesto on top.

Serve with crusty bread or ciabatta

  • 2 small onions, chopped
  • 2 leeks, chopped
  • 2 carrots, peeled and chopped
  • 250g Sgaia bacon rashers cut in strips
  • 100g dried butter beans (soaked overnight and cooked for 1 ½
  • OR 300g canned butter beans
  • 1ltr vegetable stock
  • 4tbsp green pesto
